Portabello Mushroom Burger

This delicious burger is so beefy you won't miss the meat. Be sure to serve it with all the sides as a regular burger, and consider adding a slab of blue cheese or goat cheese for a more decadent touch.

Ingredients

Yield: 4 servings

4 large portobello mushroom caps
1/4 cup balsamic vinegar
1/4 cup water
1 garlic clove, pressed through a garlic press
2 Tablespoons olive oil
Pinch of salt
4 buns, toasted

Method

To prepare the marinade add the vinegar, water, garlic, olive oil and salt to a ziplock bag. Clean mushrooms with a damp cloth and remove stems. Place the mushroom in the bag and marinate for about 1 hour, turning the bag once or twice.

Prepare a charcoal grill, gas grill or broiler. Lightly coat the grill or foil lined broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat. Grill or broil the mushrooms on medium heat, turning once, until tender, about 5 - 7 minutes on each side. Place each mushroom on a toasted bun and top with onion, tomato and lettuce, as desired.

Pair with Orrando Zinfandel 2007.
